Islabelle Milne's Scottish Shortbread
Make one batch at a time.

1 cup butter (soft, not melted)
2 cups flour
7 tablespoons sugar
6 tablespoons rice flour

Mix together with your hands until the consistency is like playdough.  Do not overhandle batter.  Pat into half of a 13 x 9 inch pan.  Now make second batch the same way and fill the rest of the pan.  prick all over with a fork and mark around the edges like a pie. Sprinkle lightly with sugar.

Bake in a 300 degree oven for about 45 minutes or until golden in color.  Cut into 50 to 60 pieces while hot, then cool in pan before removing.
